Millet “Risotto”
Traditional risotto is made with Arborio rice, but this recipe uses millet as a healthier alternative.
This is vegan and gluten free recipe. Dish can be prepared in 45 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

In a saucepan, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.

Add mushrooms and cook until they release their moisture.

Add millet and stir for a minute.

Gradually add vegetable broth, stirring occasionally, until millet is cooked and creamy.

Stir in spinach, parmesan cheese, salt, and black pepper.

Let it rest for 5 minutes before serving.

Garnish with additional parmesan cheese if desired.
