Elephant garlic is not a true garlic but a variant of the leek species.

Preheat the oven to 400°F (200°C).

Cut off the top of each garlic clove to expose the cloves.

Place the garlic cloves on a baking sheet.

Drizzle olive oil over the garlic cloves and sprinkle with salt and black pepper.

Roast in the preheated oven for 30 minutes, or until the garlic cloves are soft and golden.

Remove from the oven and let it rest for 5 minutes.

Serve as an appetizer or as a spread on bread or crackers.
