  5. Reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes or until the rice and lentils are cooked and the water is absorbed.
  6. Remove the pot from heat and let it rest for 5 minutes.
  7. Fluff the rice and lentils with a fork before serving.
