  1. Preheat the oven to 375°F (190°C).
  2. In a saucepan, combine lentils, quinoa, and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes or until the liquid is absorbed.
  3. In a separate pan, sauté onion, carrot, celery, and garlic until softened.
  4. In a large bowl, combine the cooked lentils and quinoa mixture with the sautéed vegetables.
  5. Add flaxseed meal, tomato paste, soy sauce, Worcestershire sauce, thyme, oregano, salt, and black pepper. Mix well.
  6. Transfer the mixture to a greased loaf pan and press it down firmly.
  7. Bake for 30 minutes.
  8. Remove from the oven and let it rest for 10 minutes.
  9. In a small bowl, mix breadcrumbs and ketchup. Spread the mixture over the loaf.
  10. Return to the oven and bake for an additional 10 minutes or until the top is golden brown.
  11. Remove from the oven and let it cool slightly before slicing.
  12. Serve the meatless loaf with your favorite sides and enjoy!
