Maharagwe–(Spiced Red Beans in Coconut Milk)
Maharagwe is a popular dish in East Africa, especially in Kenya and Tanzania. It is often served with Ugali, a staple food made from maize flour.

Rinse the red beans and soak them overnight.

In a large pot, heat the cooking oil over medium heat.

Add the chopped onion and minced garlic cloves. Sauté until golden brown.

Stir in the tomato paste, curry powder, cayenne pepper, salt, and black pepper. Cook for 2 minutes.

Add the soaked red beans and coconut milk to the pot. Stir well.

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, or until the beans are tender.

Remove from heat and let it rest for 5 minutes.

Garnish with fresh cilantro and serve hot with rice or bread.
