Preheat the oven to 180°C.

In a mixing bowl, combine soybean flour, rice flour, baking powder, and salt.

Add maple syrup, olive oil, and almond milk to the dry ingredients. Mix well to form a dough.

Roll out the dough on a floured surface to a thickness of about 1cm.

Cut the dough into desired shapes using a cookie cutter.

Place the rusks on a baking tray lined with parchment paper.

Bake for 15-20 minutes until golden brown.

Remove from the oven and let them cool for 30 minutes.
