Heat olive oil in a large skillet over medium heat. Add garlic and sauté until fragrant.

Add beet greens and vegetable broth. Bring to a simmer and cover.

Cook for 8-10 minutes, or until beet greens are tender.

Stir in rice vinegar, sesame seeds, salt, and black pepper. Cook for an additional 2 minutes.
