  1. Cook quinoa according to package instructions. Drain and set aside.
  2. In a large bowl, mash black beans with a fork.
  3. Grate the red bell pepper, zucchini, and carrot. Finely chop the green onion and garlic.
  4. Add the grated vegetables, green onion, garlic, cooked quinoa, cumin, paprika, salt, black pepper, breadcrumbs, and egg to the bowl with the mashed black beans. Mix well.
  5. Shape the mixture into small patties.
  6. Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, until golden brown.
  7. Toast the slider buns.
  8. Assemble the sliders by placing a lettuce leaf, a quinoa patty, a tomato slice, and avocado on each bun.
  9. Serve and enjoy!
