Rinse the lentils and set aside.

Heat oil in a pan and add cumin seeds.

Once the seeds crackle, add chopped onions, garlic, and ginger. Sauté until golden brown.

Add curry powder, turmeric powder, and chopped tomatoes. Cook until tomatoes are soft.

Add the rinsed lentils, water, and salt. Bring to a boil, then reduce heat and simmer for 20 minutes or until lentils are cooked.

Stir in lemon juice and garnish with coriander leaves.

Let it rest for 5 minutes before serving.

Serve hot with rice or naan bread.
