Rinse and drain the lentils. Cook them in boiling water for about 20-25 minutes or until tender. Drain and set aside.

Meanwhile, cut the bell pepper, zucchini, and red onion into bite-sized pieces.

Place the vegetables on a baking sheet, drizzle with olive oil, and season with salt and black pepper. Toss to coat evenly.

Roast the vegetables in the preheated oven for 15-20 minutes or until they are slightly charred and tender.
