Cook the rice and let it cool.

Heat oil in a pan and add mustard seeds, urad dal, chana dal, curry leaves, green chilies, and grated ginger. Saute until the dal turns golden.

Add turmeric powder and salt. Mix well.

Add the cooked rice and lemon juice. Mix gently until well combined.

Cover and let it rest for 5 minutes.
