Preheat the oven to 375°F (190°C). Grease a 9-inch (23 cm) square baking dish.

In a large bowl, whisk together the cornmeal, flour, baking powder, baking soda, and salt.

In a separate bowl, combine the coconut milk, apple cider vinegar, maple syrup, and vegetable oil.

Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the frozen corn kernels.

Transfer the batter to the prepared baking dish and smooth the top.

Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
