Collard Greens with Onions and Olives
Collard greens are a staple in Southern cuisine and are often referred to as the ‘Soul Food’ green.

Wash the collard greens and remove the stems. Roll the leaves tightly and slice them into thin strips.

Heat olive oil in a large skillet over medium heat. Add onions and garlic, and sauté until onions turn translucent.

Add collard greens, salt, black pepper, and red pepper flakes to the skillet. Stir to combine, then cover and cook for 10 minutes.

Pour vegetable broth into the skillet, cover, and cook for an additional 30 minutes, or until the collard greens are tender.

Stir in green olives and cook for 5 more minutes.

Remove from heat and let it rest for 5 minutes before serving.

Serve hot as a side dish.
