  1. Rinse the rice and soak it in water for 30 minutes.
  2. Peel and grate the beetroot.
  3. Finely chop the onion and garlic cloves.
  4. In a large pot, heat the vegetable oil over medium heat.
  5. Add the chopped onion and garlic, and sauté until golden brown.
  6. Add the grated beetroot and cook for 5 minutes.
  7. Stir in the tomato paste, ground cumin, ground turmeric, ground cinnamon, ground cardamom, and salt. Cook for another 2 minutes.
  8. Drain the soaked rice and add it to the pot. Stir well to coat the rice with the beetroot mixture.
  9. Add water and bring to a boil.
  10. Reduce the heat to low, cover the pot, and let it simmer for 30 minutes or until the rice is cooked and tender.
  11. Remove from heat and let it rest for 10 minutes.
  12. Fluff the rice with a fork before serving. Enjoy!
