  1. Press tofu to remove excess moisture, then cut into cubes.
  2. Heat vegetable oil in a pan and fry tofu until golden brown. Remove and set aside.
  3. In the same pan, sauté garlic and ginger until fragrant.
  4. Add onion, bell peppers, and carrots. Stir-fry for a few minutes.
  5. In a small bowl, whisk together tomato ketchup, rice vinegar, soy sauce, brown sugar, cornstarch, water, salt, and black pepper.
  6. Pour the sauce mixture into the pan with vegetables. Stir well.
  7. Add pineapple chunks and fried tofu. Mix gently.
  8. Cook for a few more minutes until the sauce thickens.
  9. Garnish with green onions, if desired.
  10. Serve hot with rice.
