  1. Rinse the lentils and soak them in water for 30 minutes.
  2. Heat oil in a large pan and add chopped onions, garlic, and ginger. Cook until onions are translucent.
  3. Add chopped tomatoes, aubergine, and all the spices. Cook for 5 minutes.
  4. Drain the lentils and add them to the pan. Stir well.
  5. Add water, cover the pan, and simmer for 30 minutes or until the lentils are cooked.
  6. Stir in fresh coriander leaves and lemon juice.
  7. Serve hot with rice or bread.
