  1. Press the tofu to remove excess moisture, then cut it into cubes.
  2. Heat vegetable oil in a large skillet over medium-high heat.
  3. Add the tofu cubes and cook until golden brown and crispy on all sides.
  4. Remove the tofu from the skillet and set aside.
  5. In the same skillet, add the sugar snap peas, red bell pepper, scallions, garlic, and ginger.
  6. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.
  7. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, cornstarch, salt, black pepper, red pepper flakes, and water.
  8. Pour the sauce over the vegetables in the skillet and cook for another 1-2 minutes until the sauce thickens.
  9. Add the seared tofu back to the skillet and toss to coat it with the sauce.
  10. Cook for an additional 1-2 minutes until the tofu is heated through.
  11. Serve hot and enjoy!
