Tofu, also known as bean curd, is believed to have originated in ancient China over 2,000 years ago.

  1. Soak the soybeans in water overnight.
  2. Drain the soybeans and blend them with fresh water until smooth.
  3. Cook the soybean mixture in a pot over medium heat, stirring constantly, until it thickens.
  4. In a separate bowl, dissolve the nigari in water.
  5. Slowly pour the nigari mixture into the pot, stirring gently.
  6. Let the mixture sit undisturbed for 10 minutes.
  7. Line a tofu press with cheesecloth and carefully transfer the tofu mixture into it.
  8. Place a weight on top of the tofu press and let it rest for 1 hour.
  9. Remove the tofu from the press and sprinkle with salt.
  10. Heat oil in a pan and fry the tofu until golden brown on both sides.
  11. Serve hot and enjoy!
