Herby Aubergine

Preheat the oven to 200°C (400°F).

Slice the aubergine into 1cm thick rounds.

Brush both sides of the aubergine slices with olive oil.

Place the aubergine slices on a baking sheet and bake for 20-25 minutes, or until golden brown.

Meanwhile, finely chop the garlic cloves and fresh herbs.

In a small bowl, mix together the garlic, herbs, lemon juice, salt, and black pepper.

Once the aubergine slices are cooked, remove them from the oven and let them rest for 10 minutes.

Drizzle the herb mixture over the aubergine slices.
