Preheat the oven to 180°C (350°F).

In a large bowl, combine the okara, rice flour, cocoa powder, baking powder, and salt.

In a separate bowl, mix together the coconut oil, maple syrup, and vanilla extract.

Pour the wet ingredients into the dry ingredients and mix until well combined.

Roll the dough into small balls and place them on a baking sheet lined with parchment paper.

Flatten each ball with a fork to create a cookie shape.

Bake for 10-12 minutes, or until the edges are slightly golden.
