Dilled Mushroom Soup

Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, cook until softened.

Add sliced mushrooms and cook until browned.

Pour vegetable stock and bring to a boil. Reduce heat and simmer for 15 minutes.

Stir in dill, salt, and black pepper. Cook for another 5 minutes.

Remove from heat and let it rest for 5 minutes.

Using an immersion blender, blend the soup until smooth.

Stir in lemon juice and coconut milk.

Reheat the soup if necessary.
