Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

In a large bowl, whisk together the whole wheat flour, baking soda, ground ginger, ground cinnamon, ground cloves, and salt.

In a separate bowl, mix together the melted coconut oil, molasses, maple syrup, vanilla extract, and grated fresh ginger.

Pour the wet mixture into the dry mixture and stir until well combined.

Use a cookie scoop or tablespoon to portion the dough and roll it into balls. Optionally, roll each ball in turbinado sugar for a sparkly coating.
