Barbecue Baked Lentils
Lentils are one of the oldest cultivated crops and have been a staple food in many cultures for thousands of years.

Preheat the oven to 350°F (175°C).

In a large oven-safe dish, combine lentils, diced onion, minced garlic cloves, tomato paste, barbecue sauce, maple syrup, Dijon mustard, Worcestershire sauce, liquid smoke, smoked paprika, cumin, salt, black pepper, and water.

Mix well to combine all the ingredients.

Cover the dish with aluminum foil and bake for 30 minutes.

Remove the foil and bake for an additional 15 minutes, or until the lentils are tender and the sauce has thickened.

Let it rest for 10 minutes before serving.
