Cook the brown rice according to package instructions.

In a large pan, heat olive oil over medium heat. Add garlic and ginger, and sauté for 2 minutes.

Add mixed vegetables and cashew nuts to the pan. Stir-fry for 5 minutes.

Add cooked brown rice to the pan and stir-fry for an additional 5 minutes.

Season with soy sauce, salt, and black pepper. Mix well.
