Preheat the grill to medium-high heat.

Cut the tofu, zucchini, eggplant, and red bell pepper into thick slices.

In a small bowl, whisk together balsamic vinegar, olive oil, salt, and black pepper.

Brush the marinade on both sides of the vegetables and tofu.

Grill the vegetables and tofu for about 5-6 minutes per side, or until grill marks appear.

Remove from the grill and let them rest for 5 minutes.

Stack the grilled vegetables and tofu, alternating between each, to create a stack.

Garnish with fresh mint leaves.
