Instructions

  1. Preheat the grill to medium-high heat.
  2. Peel back the husks of the corn, leaving them attached at the base. Remove the silk and fold the husks back over the corn. Soak the corn in cold water for 10 minutes.
  3. While the corn is soaking, prepare the other ingredients. Dice the red onion, bell pepper, and cherry tomatoes. Roughly chop the cilantro. Cut the lime into wedges.
  4. Remove the corn from the water and shake off any excess. Place the corn on the grill and cook for 10 minutes, turning occasionally, until lightly charred.
  5. Remove the corn from the grill and let it cool slightly. Once cool enough to handle, cut the kernels off the cob.
  6. In a large bowl, combine the grilled corn, edamame, red onion, bell pepper, cherry tomatoes, and cilantro. Squeeze the lime wedges over the salad and drizzle with olive oil. Season with salt and black pepper.
  7. Toss everything together until well combined. Serve the succotash salad immediately or refrigerate until ready to serve.
