  1. Preheat the grill to medium-high heat.
  2. Pierce the eggplants with a fork and place them on the grill. Cook for about 20 minutes, turning occasionally, until the skin is charred and the flesh is soft.
  3. Remove the eggplants from the grill and let them cool for a few minutes.
  4. Cut the eggplants in half lengthwise and scoop out the flesh into a bowl.
  5. Add tahini, lemon juice, garlic, olive oil, salt, and ground cumin to the bowl with the eggplant flesh. Mix well until smooth.
  6. Transfer the mixture to a serving dish and sprinkle with paprika and fresh parsley.
  7. Let the baba ghanoush rest for about 10 minutes before serving.
  8. Serve with pita bread or fresh vegetables.
