Heat vegetable oil in a pan and sauté the onion, garlic, and ginger until golden brown.

Add the turmeric powder, cumin powder, coriander powder, and red chili powder. Stir well.

Pour in the coconut milk and simmer for 20 minutes.

Season with salt and garnish with fresh coriander leaves.
