In a large bowl, mash the ripe bananas until smooth.

Add the cooked quinoa, gluten-free flour blend, baking powder, cinnamon, salt, almond milk, vanilla extract, and maple syrup. Stir until well combined.

Heat a non-stick skillet over medium heat and add coconut oil.

Pour 1/4 cup of the pancake batter onto the skillet and spread it into a circle.

Cook for 2-3 minutes, or until the edges start to set and bubbles form on the surface.

Flip the pancake and cook for another 2-3 minutes, or until golden brown.

Repeat with the remaining batter.

Serve the pancakes topped with fresh berries and sliced bananas. Enjoy!
