Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish.

In a large bowl, combine the flour, sugar, and salt. Stir in the melted butter and vanilla extract until the mixture resembles coarse crumbs.

Press half of the mixture into the bottom of the prepared baking dish to form the crust.

In a separate bowl, beat the eggs and then stir in the fruit cocktail, walnuts, and coconut. Spread the mixture evenly over the crust.

Sprinkle the remaining crumb mixture over the fruit cocktail layer.

Bake in the preheated oven for 25 minutes, or until golden brown.

Allow to cool in the baking dish for 30 minutes, then cut into bars before serving.
