Peel and chop the carrots, onion, garlic, and ginger.

In a large pot, heat some oil and sauté the onion, garlic, and ginger until fragrant.

Add the carrots and curry powder to the pot and cook for a few minutes.

Pour in the vegetable broth and coconut milk, then bring to a boil.

Reduce the heat and let the soup simmer for about 20 minutes, or until the carrots are tender.

Use an immersion blender or a regular blender to puree the soup until smooth.

Stir in the lime juice, salt, and black pepper.

Serve the soup hot, garnished with fresh cilantro.
