Preheat the oven to 350°F (175°C).

In a mixing bowl, combine the okara, almond flour, maple syrup, coconut oil, vanilla extract, baking powder, and salt. Mix well until a dough forms.

Fold in the dark chocolate chips.

Scoop spoonfuls of the dough onto a baking sheet lined with parchment paper.

Flatten each cookie slightly with the back of a spoon.

Bake for 12-15 minutes, or until the edges are golden brown.

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.

Transfer to a wire rack to cool completely.
