  3. Place a grape leaf flat on a clean surface and spoon a small amount of the rice mixture onto the center of the leaf.
  4. Fold the sides of the leaf over the filling and roll it up tightly.
  5. Repeat with the remaining grape leaves and filling.
  6. Place the dolmas in a pot, seam side down, and add enough water to cover them.
  7. Bring the water to a boil, then reduce the heat and simmer for about 45 minutes to 1 hour, or until the rice is cooked and the dolmas are tender.
  8. Remove the dolmas from the pot and let them rest for about 10 minutes before serving.
  9. Serve the dolmas warm or at room temperature with a drizzle of olive oil and lemon wedges, if desired.
