Barberry Rice (Zereshk polow) Recipe
Barberries are rich in vitamin C and antioxidants, and are a popular ingredient in Persian cuisine.

Rinse the rice under cold water until the water runs clear. Soak the rice in salted water for 30 minutes.

In a pot, heat vegetable oil and sauté the chopped onions until golden brown.

Drain the rice and add it to the pot. Stir well to coat the rice with the onions and oil.

Add water and salt to the pot. Bring to a boil, then reduce the heat to low and cover the pot. Cook for 15 minutes.

In a separate pan, melt butter and add saffron. Stir until the saffron dissolves.

Add the barberries to the saffron butter and cook for 5 minutes.

Once the rice is cooked, remove it from the heat and let it rest for 10 minutes.

Fluff the rice with a fork and transfer it to a serving dish. Top with the saffron barberries.
