  1. Peel and chop the parsnips, apples, onion, and garlic.
  2. Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic and cook until softened.
  3. Add the curry powder and cook for another minute.
  4. Add the chopped parsnips, apples, vegetable stock, coconut milk, lime juice, salt, and black pepper to the pot.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes or until the parsnips are tender.
  6. Meanwhile, preheat the oven to 200°C (400°F). Thinly slice the remaining parsnips and toss them with olive oil, salt, and black pepper.
  7. Place the parsnip slices on a baking sheet and bake for about 10-15 minutes or until golden and crispy.
  8. Once the soup is cooked, use an immersion blender or a regular blender to puree it until smooth.
  9. Serve the soup hot, topped with the parsnip crisps.
