  1. Soak the glass noodles in warm water for about 10 minutes until they soften. Drain and set aside.
  2. Heat the sesame oil in a large pan or wok over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
  3. Add the carrots, bell peppers, cabbage, and mushrooms to the pan. Stir-fry for 5 minutes until the vegetables are tender-crisp.
  4. Push the vegetables to one side of the pan and add the soaked glass noodles. Stir-fry for 2-3 minutes until heated through.
  5. Pour the soy sauce over the noodles and vegetables. Stir well to combine.
  6. Remove from heat and garnish with chopped green onions and cilantro.
  7. Serve the glass noodle stir-fry with lime wedges on the side.
