  1. Preheat the grill or oven to 400°F (200°C).
  2. Slice the eggplants lengthwise into 1/4-inch thick slices.
  3. Brush both sides of the eggplant slices with olive oil and season with salt and pepper.
  4. Grill or bake the eggplant slices for about 5 minutes per side, until softened and slightly charred.
  5. In a bowl, combine the ricotta cheese, Parmesan cheese, chopped basil, minced garlic, salt, and pepper.
  6. Spread a spoonful of the cheese mixture onto each eggplant slice.
  7. Roll up the eggplant slices and place them seam side down in a baking dish.
  8. Pour marinara sauce over the eggplant rolls.
  9. Bake for 15-20 minutes, until the cheese is melted and bubbly.
  10. Let the eggplant rolls rest for 10 minutes before serving.
  11. Garnish with fresh basil leaves, if desired.
