Eggplant Rolls
Eggplants are actually a fruit, not a vegetable, and belong to the nightshade family.
This is vegan and gluten free recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 9.

Preheat the grill or oven to 400°F (200°C).

Slice the eggplants lengthwise into 1/4-inch thick slices.

Brush both sides of the eggplant slices with olive oil and season with salt and pepper.

Grill or bake the eggplant slices for about 5 minutes per side, until softened and slightly charred.

In a bowl, combine the ricotta cheese, Parmesan cheese, chopped basil, minced garlic, salt, and pepper.

Spread a spoonful of the cheese mixture onto each eggplant slice.

Roll up the eggplant slices and place them seam side down in a baking dish.

Pour marinara sauce over the eggplant rolls.

Bake for 15-20 minutes, until the cheese is melted and bubbly.

Let the eggplant rolls rest for 10 minutes before serving.
