Heat olive oil in a large pot over medium heat. Add the onion, garlic, and ginger, and cook until fragrant.

Add the carrots, cumin, salt, and pepper, and cook for another 5 minutes.

Add the vegetable broth and bring to a boil. Reduce heat and let simmer until the carrots are tender.

Use an immersion blender or transfer the soup to a blender to puree until smooth.

Return the soup to the pot and stir in the coconut milk and lime juice. Heat until warmed through.
