Pea Soup Floater
Pea soup has been enjoyed for centuries and is a popular dish in many cultures around the world.

In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until translucent.

Add green peas and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.

Using an immersion blender or regular blender, puree the soup until smooth.

Season with salt and black pepper to taste.

Toast the bread slices and spread butter on each slice.

Ladle the pea soup into bowls and place a buttered bread slice on top of each bowl.

Garnish with fresh parsley.
