In a large pot, heat some oil and sauté the onion and garlic until fragrant.

Add the carrots, celery, and potatoes. Cook for a few minutes.

Stir in the tomato paste, bay leaf, thyme, salt, and black pepper. Mix well.

Pour in the vegetable broth and bring to a boil.

Reduce the heat and let the soup simmer for about 20 minutes or until the vegetables are tender.

Add the red kidney beans and corn kernels. Cook for an additional 5 minutes.

Remove the bay leaf and stir in the fresh parsley and lemon juice.

Let the soup cool slightly before transferring it into jars.

Seal the jars tightly and refrigerate until ready to serve.
