  1. In a large bowl, whisk together the buckwheat flour, all-purpose flour, and salt.
  2. In a separate bowl, beat the eggs, then add the milk and water. Gradually whisk the wet ingredients into the dry ingredients until smooth.
  3. Let the batter rest for 30 minutes.
  4. Heat a non-stick skillet over medium heat and brush with vegetable oil.
  5. Pour about 1/4 cup of batter into the skillet, swirling to coat the bottom evenly.
  6. Cook until the edges start to brown and the center is set, about 2 minutes. Flip and cook for another 1-2 minutes.
  7. Repeat with the remaining batter.
  8. Serve the buckwheat crepes with your favorite toppings, such as fresh fruit, yogurt, or maple syrup.
