Buckwheat crepes, also known as galettes, are a traditional dish from the Brittany region of France.

In a large bowl, whisk together the buckwheat flour, all-purpose flour, and salt.

In a separate bowl, beat the eggs, then add the milk and water. Gradually whisk the wet ingredients into the dry ingredients until smooth.

Let the batter rest for 30 minutes.

Heat a non-stick skillet over medium heat and brush with vegetable oil.

Pour about 1/4 cup of batter into the skillet, swirling to coat the bottom evenly.

Cook until the edges start to brown and the center is set, about 2 minutes. Flip and cook for another 1-2 minutes.

Repeat with the remaining batter.

Serve the buckwheat crepes with your favorite toppings, such as fresh fruit, yogurt, or maple syrup.
