Coconut Green Lentil Curry

Rinse the green lentils and soak them in water for 30 minutes.

In a large pot, heat coconut oil and sauté onions, garlic, ginger, and green chili until onions turn translucent.

Add turmeric powder, cumin powder, coriander powder, and curry leaves. Stir well.

Drain the soaked lentils and add them to the pot. Mix well.

Add coconut milk, water, and salt. Bring to a boil.

Reduce heat and simmer for 25-30 minutes, or until lentils are tender.

Serve hot with rice or bread.
