Preheat the oven to 350°F (175°C).

In a mixing bowl, combine almond flour and cocoa powder.

Add coconut oil, maple syrup, and peppermint extract. Mix until well combined.

Roll the dough into small balls and flatten them into cookies.

Place the cookies on a baking sheet lined with parchment paper.

Bake for 10 minutes, then let them cool completely.

In a microwave-safe bowl, melt the dark chocolate chips.

Spread a layer of melted chocolate on the bottom side of half the cookies.

In another bowl, whip the coconut cream until fluffy.

Spread a layer of whipped coconut cream on the bottom side of the remaining cookies.

Sandwich the cookies together, pressing gently.

Sprinkle crushed candy canes on top.
