Shape the mixture into small egg-shaped balls and place them on a baking sheet lined with parchment paper.

Place the baking sheet in the refrigerator and let the eggs rest for about 1 hour.

In a microwave-safe bowl, melt the white chocolate chips and coconut oil together, stirring every 30 seconds until smooth.

Dip each coconut egg into the melted white chocolate mixture, coating it completely.
