Black eyed peas are considered a symbol of good luck and prosperity in Southern cuisine, especially when eaten on New Year’s Day.

Rinse the black eyed peas and soak them overnight.

In a large pot, heat olive oil over medium heat.

Add onion, garlic, bell pepper, and celery. Sauté until vegetables are tender.

Stir in the soaked black eyed peas, tomatoes, vegetable broth, smoked paprika, cayenne pepper, thyme, salt, and black pepper.

Bring the mixture to a boil, then reduce heat to low and simmer for about 1 hour or until the black eyed peas are tender.

Remove from heat and let it rest for 10 minutes.
