Cut the cauliflower into florets and pulse in a food processor until it resembles couscous.

Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic, sauté until fragrant.

Add the cauliflower couscous to the skillet and cook for 5 minutes, stirring occasionally.

Stir in chopped bell pepper and cherry tomatoes, cook for another 3 minutes.

Remove from heat and stir in fresh parsley, lemon juice, salt, and black pepper.
