  1. Preheat the oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat olive oil over medium heat.
  3. Add onion, carrots, and celery. Sauté for 5 minutes until vegetables are tender.
  4. Add garlic and tomato paste. Cook for another minute.
  5. Stir in garbanzo beans, vegetable broth, thyme, rosemary, bay leaves, salt, and black pepper.
  6. Bring to a simmer and transfer the skillet to the preheated oven.
  7. Bake for 45 minutes until the top is golden and bubbly.
  8. Remove from the oven and let it rest for 10 minutes.
  9. Sprinkle bread crumbs over the cassoulet and return to the oven for another 5 minutes.
  10. Serve hot and enjoy!
