Peel and chop the sweet potatoes, onion, and garlic cloves.

Heat olive oil in a large pot over medium heat.

Add the chopped onion and garlic cloves to the pot and sauté until they become translucent.

Add the chopped sweet potatoes, ground cumin, ground coriander, salt, and black pepper to the pot. Stir well to coat the sweet potatoes in the spices.

Pour in the vegetable stock and bring the mixture to a boil. Reduce the heat and let it simmer for about 20 minutes, or until the sweet potatoes are tender.

Remove the pot from the heat and let it cool slightly.

Use an immersion blender or a regular blender to puree the soup until smooth.

Return the soup to the pot and stir in the coconut milk.

Place the pot back on the stove and heat the soup over medium heat until warmed through.
