Rinse the black beans under cold water and soak them in water overnight.

Drain the soaked beans and rinse again.

In a large pot, heat olive oil over medium heat.

Add chopped onion, minced garlic, and diced bell pepper. Sauté until softened.

Stir in cumin powder, chili powder, and salt.

Add the soaked beans, canned diced tomatoes, and water. Bring to a boil.

Reduce heat to low, cover the pot, and simmer for about 1 hour or until the beans are tender.

Remove from heat and let it rest for 10 minutes.

Garnish with fresh cilantro and serve with lime wedges.
