Basmati rice is a long-grain rice variety known for its aromatic fragrance and fluffy texture.

Rinse the basmati rice under cold water until the water runs clear.

In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until golden brown.

Add ground cumin, ground coriander, turmeric, salt, and black pepper to the pot. Stir well.

Add rinsed basmati rice and chickpeas to the pot. Stir to combine.

Add water according to the rice package instructions. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and the liquid is absorbed.

In a separate pan, toast the almonds over medium heat until golden brown.

Once the rice is cooked, remove from heat and let it rest for 5 minutes.

Fluff the rice with a fork and garnish with toasted almonds and fresh cilantro.
